You always know that any family party or cook out is going to have potato salad. We also know each person has their own way of making potato salad. We are not different we always like to use our smoker for a smoked potato salad.
We have found that the potatoes you use don’t really matter when it comes to smoked potato salad . What matters most is the size you cut the potatoes so they can gain the most smoke.
Cut any larger potatoes in half or quarters; leave small ones whole. The idea is for all the pieces to be bite size, about 1 inch across. Arrange the potatoes in a single layer in an aluminum foil pan. Stir in the olive oil and season with salt and pepper.
Ingredients for Smoked Potato Salad
1 pound of potatoes ( we like red bliss)
1/4 cup of mayonnaise
1/4 cup of dijon mustard
2 tablespoons of fresh dill
1 teaspoon of onion powder scallions
1 teaspoon of celery salt
Salt and pepper to taste
4-5 tablespoons of oil to toss the potatoes
How to cook the Smoke Potato Salad
Step 1: Cut your potatoes in to 1 inch cubes and microwave for 5 min or boil for 4-5 min until fork tender.
Step 2: Set up your smoker following the manufacturer’s instructions and preheat to 275°F. Add wood as specified by the manufacturer.
Step 3: Place the potatoes in the smoker and smoke until tender on a cookie sheet , 1 to 1½ hours, or as needed. Stir a couple of times so the potatoes brown evenly. Remove the potatoes and let cool slightly.
Step 4: While the potatoes smoke, make the dressing: Mix ingredient from above in a bowl
Step 5: Stir the warm potatoes into the dressing while still warm . You can serve the potato salad warm or chilled (cover and refrigerate, or quick-chill the salad over a bowl of ice). Transfer to a serving bowl and dust with smoked paprika before serving.
