Who doesn’t love a good pizza? There is something so refreshing and comforting about pizza. What about smoked pizza? Many of you know we are a competition BBQ team. From time to time we have contests that throw in things that are beyond the standard Brisket, Pork, Ribs and Chicken. We love when we have a Pizza category because we always take out our Humphrey’s to make awarding winning Smoked Pizza for the judges.
You may not have a Humphrey’s and that is ok ! They idea of cooking pizza outside is not that much difference when what I will outline here for Smoked Pizza.
Smoked Pizza? How does this all work?
Start by lighting your cooker and getting your temp up to 500 degrees. To assist in this open up all the vents, daisy wheels (if you have them) and take off the valve to allow airflow. I also take out the water pan. We have done this method with a slide and drop in water pan. So it will work for both.
If you want a smokey taste to your pizza add your wood to your coals when it reaches about 450 degrees. If you want less of a smokey taste add your wood when you start your fire or skip the wood altogether and stick with straight charcoal.
While your cooker is getting to temp from your fresh dough in to a heavily greased cookie sheet or pizza pan. We find the 10 inch pizza pans and half sheet cookie sheets work best for these smoked pizzas
Now top your smoked pizza with the sauce cheese and toppings as you wish. We have done anything from Taco, Italian, Buffalo Chicken and our awarding winning cheeseburger smoked pizza.
When your cooker is to temp place the pizza in the cooker for 10-15 minutes until the cheese is melted and the edges and bottom are golden brown.
Now take the smoked pizza out of the cooker let it rest for 3-5 minutes. While you are doing shut down your cooker.
